Tropical Thai Smoothie Bowl

It’s no secret that I love Southeast Asia, especially Thailand. After three trips to the region, the one thing I can’t stop craving is the tropical fruit, especially pineapple. I love wandering through the wet markets and discovering new fruits, smells and flavors; which are beyond plentiful, and many very curious looking or downright intimidating. Have you ever seen a rambutan or smelled a durian?

When my husband and I were in Thailand this past October, I swear I must have had at least one pineapple shake a day (if not more). Gotta enjoy it while you can right? While in in Ao Nang, we discovered a quaint breakfast café down the street from our hotel called Lion & Shark that we visited two mornings in a row because of their AMAZING smoothie bowls. I’m talking full on fresh tropical fruit goodness topping a smooth, refreshing pineapple, banana and coconut smoothie topped off with granola and chia seeds. It was the perfect way to cool off a bit and a healthy start to the morning. I loved it so much, I decided to try my best to recreate their smoothie bowl, and this recipe comes pretty darn close. Quick and easy to make, I hope it brings a bit of the tropics to your kitchen!

Tropical Thai Smoothie Bowl

Inspired by Thailand, this easy and quick pineapple-banana-coconut smoothie bowl
topped with fresh tropical fruit and granola is the perfect way to start your day.



1 cup frozen pineapple

1/2 banana

1/4 cup frozen coconut (I used Trader Joe’s Frozen Coconut chunks)

2/3 cup coconut water (If you prefer a stronger pineapple flavor, you can substitute pineapple juice)

1/2 cup crushed ice


1/4 Red Papaya

1/2 Banana

1/2 Apple

1/4 cup Granola (I used Trader Joe’s coconut granola)


  1. Prep/cut fresh fruit toppings
  2. Add pineapple, banana, coconut, coconut water and crushed ice into a blender and blend until all ingredients are smooth and free of any large chunks.
  3. Add smoothie mixture to a large bowl and smooth the top to create an even layer
  4. Top with desired fruits and granola
  5. Enjoy!


This is a very versatile recipe and any of the fruits or toppings can be swapped out with your favorites! Feel free to customize with your favorite fruit combinations, granola, or other toppings of your choice.
